why do they have different calendar for religious holidays?

The Eastern Orthodox Churches follow the old Julian calendar and did not adapt the Gregorian calendar. In the Julian calendar the 25th of December falls on (Gregorian) January 7.

Some of the Greek Orthodox Christians I know and some other orthodox Christians celebrate Christmas two week later because that is when the Magi/Wise Man arrived in Bethlehem. The Magi did not arrive in Bethlehem the night of His birth. The shepherds arrived at the stable the night Jesus was born but not the Magi. It took the longer to arrive because they had to travel following the star and for a short while it was not visible and they stopped off the see Herod. Then it reappeared stationary over Bethlehem and they were able to finish the journey.
