i really like edge from final fantasy IV - he's arrogant and cool. he's a ninja, and can steal, and use ninjitsu magics..
and i like gau from final fantasy VI - because he's an ignorant jerk that doesnt' even know that he's not an animal. doesn't even know that he's a person
but my favorite would be mustadio from final fantasy tactics - i've never seen a more useful character. he can make you unable to act/fight/cast magic and he can also prevent you from moving - and ghosts are no problem to this guy!
