The more we get nervous, the more we keep checking over on what we're going to do/say/act/write, whatever. And in the case of tests, the more we try to correct ourselves if we have even an inkling of suspicion that our answer is wrong, so we go in and correct it, but this usually is the wrong course because unless it's a slip, the first answer is usually your best guess at it. While someone who isn't nervous goes with their first answer, and is usually right.

people who care get nervous because they wonder if they'll be able to go through it and remember all the right answers and what they studied and if they'll do good on it after all the hard work they put into it.

the people who don't care breeze through it because they don't care about "trying their best" and could care less about the grade they get because they already know what they're going to get.

basic difference

people who care: worry about how it will turn out

people who don't care: would rather do something else so they get it over with and don't care

Those who purportedly "breeze right through" most likely just skipped a bunch of problems, said, "Hey, that's it. I'm done... time to be unproductive again," and turn in their unifinished test. Those who give a crap and worry are usually the ones who get the top scores back (from my experience with AP classes and high-achieving friends who worry to no end).

If someone doesn't care about something, why would they get nervous about it?

Personally, I only get nervous when doing tests I think I haven't prepared for enough.

The answer lies in your question. Because people who don't care have nothing to lose.

If you study hard and get an 'A,' that's great, but it's expected.
If you study hard and get an 'F,' you just wasted a ton of time.

On the other hand, if you don't study and get an 'A', you win.
If you don't study and get an 'F,' you get what you expected.

Everybody functions better when they're relaxed. Acting, sports, debates, first dates and of course tests. When you allow yourself to let things be easy, such as by actually saying to yourself "This game is easy," when shooting hoops, the ball just seems to fly straighter and truer.
Hence the saying, "Easy does it."
