It was a translation error. It was originally supposed to be "Monkey Kong," but the Japanese makers/translaters got it wrong.
edit - snopes.com also says that it is more likely that the creator chose "donkey" to mean foolish, like a jackass.
It's like figuring out how many licks it takes to get to the center of a tootsie roll pop. The world may never know.

when the game came out orginally for the arcade someone in japan that doesn't speak english put a "D" instead of an "M" on the word monkey. the game was orginally called monkey kong but by the time they found the mistake, thousands of games had already been made and it would have been too expensive to go back and change it so they just stayed with donkey kong

Donkey Kong (ãã³ãã¼ã³ã³ã°, DonkÄ« Kongu?) (or sometimes referred to simply as DK) is a character from Nintendo that has appeared in many video games since 1981. Donkey Kong was created by Shigeru Miyamoto. Since 1994 he has worn a necktie, his sole item of clothing.
It is just his name. Donki is I think Japanese slang for silly or foolish.

"Kong" is a gorilla. Remember in King Kong, that gorilla was named king Kong. So maybe that's why the makers of the game named him donkey Kong.

the word "kong" refers to them being gorillas (like king kong), the word "donkey" is just used as a discription, perhaps they are similar to donkeys in some way (I haven't played it in awhile). Or maybe "donkey is used to describe thier behavior, kind of like "dopey"

Baisically he came up with synonyms for "foolish monkey"
A donkey is sometimes reffered as an @$$, which is also used to describe a foolish person.
Kong, as we all know, means monkey.
