Yule, or Solstice is typically a God-based holiday. It celebrates the rebirth of the God, as the days now begin to get longer.
Twice a year, the Holly King and the Oak King battle. At Yule, the Oak King wins and at Litha, the Holly King wins.
Any of the sun gods is good. It really depends on your version of Wicca. If you're a Dianic, you won't even be interested in the Gods. Sorry I can't be a bit more accurate, but I'm not sure what sort of Wicca you follow.

Invoke the Holly King and Oak King or the Greenman who is the combined aspect of the twin Kings. If you invoke them sepperately then honnor the departure of the Holly King and beginning reign of the Oak King. Creasent shaped almond cookies or cakes are the traditional offering for Yule. Hope that helps.
