You use what is in the vehicle. You don't change thermostat because the weather has changed.

Set the thermostat to a constant 68 degrees for day and night settings.

As well as I know, most all cars on the road today run a 195 deg. thermostat. as long as it is functioning normally there is no need to change it either for summer or winter its the same all the time, but do make sure your anti-freeze is up to the task you need it to perform at, a 50-50 mixture is good to around minus 35 deg F.
