Do you have a rental car? Are you going to Oahu or the big island? If Oahu, drive to the North Shore. They also have the Dole Pineapple field on the way from Waikiki. While out that way of the island you can check out the little historic town of Haleiwa and also Waimea Valley which is very beautiful and has waterfalls.
You should take some good sneakers or hiking boots and take the hike up Diamond Head. This has a beautiful look out over the Waikiki beach. And the hike is not that difficult. I used to run up and than run down. Also, there are tons of hiking opportunities all over the island.
The USS Arizona Memorial by Pearl Harbor is a wonderful and heartening experience.
Go snorkling at Hanauma Bay. Very beautiful.
For a white sand beach with no surf you have to go to the Ko Olina Lagoons in Kapolei, Oahu. Just amazingly beautiful and relaxing with great swimming.
I could name many more areas as I lived there for 4 years and absolutely had the time of my life!

Which island? Are you a mountain person or a beach person or both?
Actually, there are SO many great outdoors places to go but you should definitely look for a tiki-bar or nightclub where traditional Hawai'ian music is being performed...preferably where a steel guitar is prominent in the band.
