Well, you know him best, so you'd have better luck bouncing ideas off a person face to face, but here are a few things that all guys like:
Food. Treats. Stuff with sugar or meat and made by you if at all possible.
Hobby stuff. All guys have a hobby, whether it's fishing, cars, golf, music, a pet, whatever. You can't go wrong getting something related to his hobby.
Creature comforts. Something that helps him relax, or is warm and snuggly (but not too feminine) like slippers, a robe, one of those neck support pillow things.

Well I was going through the same thing as you this Christmas, I ended up getting him some shoes, but thats because I asked him what he wanted and thats what he wanted, but if you don't want to ask your boyfriend then look at the things he needs or doesn't have and it also depends how much u are welling to spend?
Here are some things you could get him:
A nice Dressey shirt
or A nice polo shirt or just whatever kinds of shirts he likes
Buy him a movie he's been wanting or CD
Buy him an watch
A digital camera
An mp3 or Ipod
or just make a romatic dinner for the two of you

P.S. You can make him brownies a long with his gift, this is a good idea because brownies are good and also something else about chocolate is that it make your emotions like good it makes you happy and puts you in a good mood, just another P.S. put caramel on top of the brownies it tastes really good! what i think you should get him is two things something bought and something made, so it shows that you like him enough to spend money on him and that you actually put some time in his present. suggestions would be for what you buy have it be something funny, something he doesn't really need but makes him laugh. don't get him a gift card cause that would show that you don't know him enough to know what he would like. for the made present maybe get a bunch of pics of you guys together and put it in a frame
