If you want to wipe your iPod clean, you can use the iPod software updater utility or iTunes in later versions. Using that, you can reset your iPod to original.
If you just want to take a few songs off, you will have to make a new playlist in iTunes without those songs and copy that to the iPod which will overwrite the old playlist.

Go to your itunes on the computer, the ones you HAVE. Not the store. Anyway, then there is a button that says delete. I'm pretty sure you can figure out the rest.

Delete the music from your iTunes. Next time you connect your iPod to the computer, your iPod will sync with your iTunes.

there are two ways:
1....(if its automatic update)
1.open itunes
2. erease to the song from the library or unmark it
3. update the ipod
2.....(manual update)
1. click on "ipod" (or the name of ur ipod)
2.search for the song(s) , right.click, erease
