Ahhh a fun one. The FDA actually has regualtions telling companies how many parts per million of rats/mice/bugs that can be included in a food product. There's no laws aginst their consumption, just how much of them can be included in a food product your selling.
I've been in quality control in both the automative and food industries. You don't really want to know what exactly your eating.

I'm sure it's legal for you to eat, but I doubt it's legal for you to slaughter or sell the meat on your property since it probably violates health codes.
