The main component of sweet potato that causes flatulence (that's fart for you) is carbohydrates. Especially oligosaccharides such as raffinose & stachyose. Beans and such are loaded with these particular type of carbohydrates.

Humans & some other animals (pigs, poultry etc.) do not possess the necessary enzymes to digest these types of carbohydrates and thus the oligosaccharides pass undigested through the stomach and upper intestine. In the lower intestine they are fermented by gas-producing bacteria which make carbon dioxide, methane, and/or hydrogen -- leading to the flatulence.

its the same reason as beans, you have bacteria in you large intestine(colon) and they help breakdown your food, when you eat foods with oligosaccharides(sugars the body cant breakdown) the bacteria goes crazy on it and produces more gas than usual because of all the work... also these foods have oligosaccharides:corn, bell peppers, cauliflower, cabbage, milk, bread, eggs, beer, and raisins
