Chitin. It is a polysaccharides that makes up the exoskeleton of insects. It can be very hard or malleable depending on its make up. It is relatively impervious to water loss, great for desert conditions. It can be jointed together like armour, great for safety.
The other organism that it also occurs in is Fungi.
The shells of certain beetles are used to make shellac, a varnish type product used to French Polish furniture.
