It sounds as if the date is made by insert - field - time & date...etc., so it's a field that updates every time the file is opened. You can highlight the date and press ctrl-shift-F9 when the document is created. this will replace the field entry with the actual value ie the current date.
I use this in a standard letter template and have a macro named "autonew" that does this automatically as I create a new document, so the date is automatically entered and then fixed. It is in the word help files, but buried deep.

Simply don't save the file when you close it so it will revert back to the original document.
