Dear Santa Claus:
I wish my gift for this year is to be happy. I am really happy these days, but I am not sure that this could last long. The other gift that I wanted is that I wish my mother and father to be happy, because if they were happy, then I am happy. The last thing I wish is that I wish you could bring the gifts to the poor. Give the poor some food, don’t let them get hungry. I know Christmas day is a very important person’s birthday, and that is Jesus Christ. Jesus Christ died to save the world, and he cared about poor people. I wish I were as great as him.
Sincerely, Hillary
P.S. Don’t eat too much or you will be unable to climb down the chimney!

Dear Santa Claus:
This year, I'd like the gift of happiness. I'm very happy these days, but I'm not sure I'll continue to be happy much longer. The other gift I want is for my mother and father to be happy, because if they were happy, then I'd be happy. The last thing I wish is for you could bring gifts to the poor. Give the poor some food, and don’t let them go hungry. I know Christmas is a very important person’s birthday, and that person is Jesus Christ. Jesus Christ died to save the world, and he cared about those less fortunate than others. I hope I can be as great as him someday.

Sincerely,
Hillary

Try this:

Dear Santa Claus:
I wish that for my gift for this year, you would make me happy. I have been really happy lately and am worried that this will not last long. For my other gift, I wish for my mother and father to be happy, because if they are happy, then I am happy. The last thing I wish for is that you could bring gifts to the poor. Give the poor some food and do not let them go hungry. I know Christmas day is a very important person’s birthday: Jesus Christ. Jesus Christ died to save the world and he cared about poor people as well. I wish I were as great as him. Thank you Santa.

Dear Santa,
I have three wishes for Chirstmas. The first wish is to be happy. These days I have been happy, but I`m not sure how long it will last. My second wish is for my parents to be happy, because if they are happy, I am happy. My final wish is for you to give presents to the poor. Please give the poor some food so they don`t get hungry. I know that Christmas is a very important persons birthday for christians. They say Jesus Christ died so the sins of man could be forgiven and he cared about poor people. I wish I were as great as him.

Sincerely, Hillary

It's a nice letter.

Since you are looking for grammar help, there are a couple of problems, but nothing major.

In the sentence about your parents, there is a mood change. You use the subjunctive past tense about your parents, "if they were happy". For yourself, you use a simple present tense with an active mood. They should match. "If they were happy, then I would be happy."

You probably should write Christmas Day, not Christmas day.

"I wish I were as great as he." Most people get this wrong all of the time, but the word "him" is not a predicate pronoun, but part of a comparison and should match what it is compared against. In this case "I".

Very good job!

Take care.

Instead of I wish my gift for this year is to be happy make it- My only wish this year is to achieve a sort of inner bliss and happiness.

Instead of I wish you could give gifts to the poor you should make it- I don't need these gifts that most take so much for granted as much as the homeless and underprivilaged do.

Instead of I wish I were more like him put- I know no body can duplicate his courage and consideration but I hope that in the coming year I make him proud and feel even more like he made the right descision and that there are still those in modern society whom appreciate what he did for us so long ago.

(I'm a writer, I say things much differently than normal.)
