I am quite sure it is the oxygen content of air that does this. I am also The ultra violet light component of natural light is part of the process. I am quite sure it can be replicated by scanning some old pages and printing it,unless you have 50 or more years to wait for it to happen naturally! Surely I jest, about the 50 years only.

It's acid contamination - usually from the lignin in paper or some other chemical contaminant - that makes old paper turn brown.

Tea or coffee works to replicate this but both contain acid and may get much worse over time - a wash of Sepia or Burnt Umber watercolour would be the safest method.

i can't tell you why paper turns brown with age but if you are looking for the same effect on new paper you can use a strong tea like Lipton (you don't have to use a fancy kind) you can just brush it on the paper or spray it. just keep trying until you get the color you want.

Oxidation. Over the years the paper is oxidized. You can do pretty much the same with a flame. Accelerated oxidation.

Use a propane torch with the tip of the blue flame about 18 inches away, under the paper. It takes practice, and don't do it in your bed room.

OR,

Soak it tea, then let it dry and give it a "little" propane flaming.

Coffee sometimes works or a strong tea water. Especially if the paper is really white. Just brush this on with a brush. You may have to press it with a dry iron to flatten it after it dries, if it curls.

Oxidisation does that.

On New paper you will get better browning (though slower) by exposing it to direct sunlight, than the methods mentioned already by others.

the chemicals in it. acid. and sun, environment play a part too.
