This is a tricky question.
Generally the specific gravity of gypsum is greater than water and therefore it won't float.
However, if the gypsum is a little amount of very fine powder, it is possible to sit on the water as its mass will not be great enough to break the surface tension.

Are you planning to build a boat out of a gypsum board? It will float may be for a while but it will eventually sink.

I know for a fact that gypsum are additives on making cement and I didn't noticed anything floating when I mixed cement when doing construction works.

It depends upon the particle size of the gypsum. If you grind the sand into a very fine powder, you can probably get it to float for a brief period. An alternative to dry this would be to take some talcum powder and blow a fine dust on top of a saucer of water and see how long it takes to sink.
