can you include back taxes tha you owe from last year in a bankruptcy?

no taxes can be included in a bankruptcy..i wish that it could though. you can set up payments with the IRS. I do that and it works out pretty good.

i believe the 2 exclusions in bancrupcys are owed taxes and student loans

No, taxes can't be discharged by bankrupcy.
