Either you've met this person before and there is a quality about him that you can't get off your mind, or it is someone you're going to meet and your mind is making sure you recognize him when you see him. And if you have met this person before it could be a sign of subconscious unfatuation.

Our minds are constantly trying to find images that it think will help us sort out any problems or confusions we are having. It's not only dreaming about a certain type of person, its also about what does that person mean to you?
Are you feeling 'stuck' because you have to work with this person, and they are a complete jerk? Are you feeling 'helpless' because you like this guy but feel you have no chance? Are you feeling 'empty' and need to focus on someone in order to take attention away from your own problems? It could be any of the above or a combination or even something else.
In many ways, the mind only repeats when it feels like the message is not being addressed or getting through. Something is going on to bring these dream images up constantly, and until it is addressed, your mind will most likely keep coming back to it.
