Dead people do not see anything because their eyes and brain no longer function.

Of course, the answer to your question somewhat depends what how you define ‘dead’.

The French scientist Antonie Lavoisier was beheaded during the French revolution The story goes that Lavoisier had his assistant stand in the crowd to watch the decapitation. As was the practice of the day, after the guillotine removed a person’s head, the executioner would hold the head up in the air so all the people could see it and cheer.

Lavoisier said that when his head was cut off he would try to blink his eyes as many times as he could. He told his assistant to count the number of blinks (if any) after his head was whacked off.

Following the execution/experiment, the assistant reported that Lavoisier had blinked his eyes 11 or so times after his head was removed from his body and held up in the air.
