George wanted them to judge Lennie by his strength rather than his intelligence. If they saw how stupid Lennie was they might have not hired the two. He didn`t want to take his chances.

Because George new that Lennie would probably say something incriminating or something that would show he was lacking mentally and they need that job.

Lennie was retarded and could not function in dealing with normal humans.
