There is considerable debate about the issue.
One explanation is that it is due to a Coca-Cola advertisement
Another is that "Santa Claus is traditionally represented in a red cloak with white fur trimmings, a reference to St Nicholas, who reputably performed his charitable acts dressed in his red bishop's robes."

The colors red and white are associated with St. Nicholas, the real saint from whom Santa Claus is derived. There's an interesting web site that explains the origins of the various versions of Santa Claus that you might find interesting: http://www.jayeye.com/gy/page06.html

Santa Claus is red because of a Coca-Cola advertising campaign. He used to be green, but Coke felt red was a more fitting color to use in their advertisements as it was the same color as their packaging and logo.

Lot's of different stories going round, but one of the more prominent ones is:
Santa used to be Green, but Coca-Cola gave him a red suit in one of their advertisments in the 1930's or 40's (not sure exactly when) and Coca-Cola controls the world, so naturally, they control Santa.
Merry Christmas

How else would you find him if he were lost in the snow at the north pole. He wears red so he is visible at all times, except to us since to us he uses his cloaking device so we cant find him, only his elves can.
Merry Xmas!!
