I am having a cheese sandwich and maybe some tomato soup. I've had a great many wonderful Christmas's though and I hope and pray everyone will have the Christmas they wish for. God Bless.

Well if you wanted to take something hot this is an old family recipe and I guarntee u want no one else have this it is called a chesse pie All you need is salt crackers or we call them soda crackers. And 1 block of chesse or a 1 lb of sherred. Take the crackers and crush them up and line the bottom of a casserole dish with them. And then add chesse keep reapeting the layers to you get to the top. And add a little more chesse. Now whip up you one egg and a little milk togather. And pour that one top. It is best if you poke hols in the casserole dish threw the crackers and chesse pour the egg and milk mixature in thier. And then after that pour some more milk on the casserole till it comes to the top of the chesse bake in the oven for about 45 minutues until the crust and the chesse is nice and golden brown serves around 15 people depending on how much people eat it is really good. And an easy dish.

Lemon butter crisps
3 cups milk
6 egg whites
1.5 cups sugar
1.5 cups lemon juice
1 cup flour
1.5 cups baking soda
1/2 teaspoon (NOT tablespoon of salt)
5 drops yellow food coloring (Durkee)
1/2 stick of unsalted butter
Preheat oven to 325 degrees.
Mix egg whites, milk, sugar and flour in a large mixing bowl until smooth, then set aside.
Combine lemon juice and food coloring in small measuring cup, stirring with teaspoon. You want it to look VERY yellow, so don't be afraid to add more coloring. You want the lemon butter crisps to be yellow and not crispy brown when they're done.
Combine the salt and baking soda in a small bowl. Use your fingers and make a "hole" in the middle of the mixture, then pour the yellow juice into the hole. Using a whisk, stir in circles from the hole to the edge of the bowl.
Once smooth, add the yellow mixture to the large mixing bowl with your egg whites, etc. Stir it all together until smooth. If it's not at least pale yellow, stir up to 3 more drops of food coloring in.
Use nonstick spray (Pam, etc.) on a cookie sheet, then dollop teaspoonsful of the mixture onto the sheet. Put cookie sheet in oven for no more than 10 minutes.
These rock. Crunch away.

My family is always nontraditional for the Christmas dinner. We voted and Italian won, woohoo. Lasagna and grilled pizza and all Italian homemade sauces. Last year we had Mexican with homemade tamales, yummy. Every year we pick a different country and we make traditional food from there. I always try to find a Christmas prayer and read it in the language from where we have chosen.

Ham, Scalloped Potatoes, Asparagus, Strawberry Jello Salad and whatever else I come up with. For dessert; Cream Cheese Tarts and Bûche de Noël.
STRAWBERRY JELLO SALAD:
2 (3 ounces) packages Strawberry Flavor Jello
1 cup boiling hot water
2 (10 ounces) packages frozen strawberries
3 Bananas - mashed
1 (16 ounces) can crushed pineapple - drained
1/2 cup walnuts - chopped fine
1 pint (16 ounces) sour cream
Dissolve jello in 1 cup boiling water.
Add frozen strawberries to jello. Stir bananas, pineapple and walnuts into jello. Spread half jello mixture in 8"x8" pan. Cool slightly (it sets up quickly). Spread sour cream over cooled jello. Pour remaining jello on top. Refrigerate.
CREAM CHEESE TARTS:
1 (8 oz) package cream cheese, softened
1 egg
1/2 cup sugar
1 teaspoon vanilla extract
5 oz graham crackers, crushed
2 teaspoons sugar
2 teaspoons butter, melted
1 can Cherry Pie Filling
Beat together cream cheese, egg, sugar and vanilla extract until smooth. Set aside. In another bowl combine graham crackers crumbs, sugar and melted butter. Line tart pan with small paper liners. Put a teaspoon graham cracker mixture in liner and press against liner to make a crust. (have crumbs go up side of liner) Spoon tablespoon cheese mixture over crumbs. Bake at 350 degrees for 15 minutes. Cool on rack. Top with cherry pie filling or desired fruit. Keep Refrigerated.
