If you don't know what all the knobs do, you shouldn't be driving. Seriously, the H & C are necessary to properly operate a car. The defrost setting is there, which you will need no matter if you're in a cold or warm climate. You'll need it for snowy weather and rainy weather to clear the windshield so you can see. Get out the operator's manual and learn what all the doodads in your car are for.

It's the temperature of your engine.
H is hot and C is cold
if it says H, your engine will overheat.
C means it needs to warm up on cold winter mornings.
