Many "sucker" type fish are nocturnal and you will not see them during the day.
When you feed them you want to do this after you turn off the lights, otherwise the other fish will "steal" their food.
However to "unshy" fish in general you can use dither fish. These are very active fish that are always out and about. Many shy fish will become more active if they see other fish swimming about. This is because if there were predators around the other fish wouldn't be out and about. So seeing them makes the shy fish more comfortable.
A fish that is often used as a dither fish is the zebra danio.

They likely need more time to adapt to their new home. Usually, the more hiding places you give them, the more they will feel secure to come out in the open. Removing hiding places often increases stress and causes the opposite reaction, a fish that is constantly trying to hide...

Give em a few days maybe. Or put something in the tank that will make it look like they're hiding behind it, but you can still see them.
