If the iPod is set to update automatically, then just uncheck all the songs you have on iTunes, then connect the iPod and it will erase all the songs from it.

If the iPod is set to update manually, then just connect it, open iTunes, under the iPod name go to music. Then go to edition, click on select all and then press delete.

Hope this helps and good luck.
