It depends on what you want to do. If you are looking for sun and sand, check out Florida - I highly recommend the Tampa area (fewer tourists and very beautiful). If you like outdoor activities and don't mind the cold, the midwest has lots of winter sports offerings (I am from MN originally) from snowmobiling and skiing to dogsled racing and snowshoeing. You could also hit Vegas - my favorite vacation destination. The weather is temperate in January and Vegas is ALWAYS on vacation. New York or Chicago are great places to visit as well if you enjoy nightlife but don't mind chancing snow and cold. Check the web for winter specials that offer deals such as reduced hotel rates, free dinners, etc, if you book through their office of tourism.

Depends on what type of vacation you are looking for. I'd say San Diego, but I'm biased since I live there. If you do come to southern california, there are lots of adventure parks without hours of eachother. That is if you are actually interested in driving around. In San Diego there is also a nice zoo and Sea World. A 30 minute you drive could get to the Wild animal park and Lego Land. There are nice beaches here aswell, some are a little crowed but I would probably be to cold to see those in January anyway.

Snow or Sun? For Snow, then you can hit quite a few states Snow Boarding or Skiing. For Sun, go to Hawaii or Florida. Hawaii though has huge swells with some waves going over 50 feet on the Banzai Pipeline. Jaws is well known for having waves that are over 100 feet. Just watching from shore is impressive enough. Florida though has tons of amusement parks, my favorite is Islands of Adventure.

What do you want: Sun and Fun or off-road ski trip? The Florida Keys are wonderful year-round for relaxation. Yellowstone National Park is a good winter wonderland of geyser gazing and cross country skiing. On the other hand, the south rim of the Grand Canyon is open year-round and Gatlinburg, TN is somewhat less crowded than it is in the summer.

New York! Always something happening there. If you want somewhere warmer, I'd go for San Diego, Los Angeles. If you're looking for a winter getaway sort of a place, try Squaw Valley or Mammoth. Have fun!
