It is derived from the mechanism that is a bracket-like plate holding bearings, supported at one end only. It is basically the same way that a tap or turn off valve works.

One definition of "****" is a valve or device to control a flow. A stopcock is a device to stop the flow of a liquid. There's also a petcock. That's normally closed, and opened to drain excess liquid. What you use to drain old antifreeze from your car radiator is a petcock. Petcock came from petty (small) ****. Just leave the *'s - you know what goes there.

It's not entirely clear. It's a c-o-c-k which stops things, in the sense meaning "faucet" or "mechanism". It's related to "c-o-c-k" a gun, but the origin of that is not known, except to note that in German the word "hahn", meaning "hen", has some of the same meaning.

(Yahoo Answers doesn't seem to want me to use the word c-o-c-k.)
