Well, first off, you say "I know Extra Magic Hours are good to stay away from." Where did you learn of this? If you're staying at one of the Resorts at Walt Disney World you get access to the Extra Magic Hours, and if you get access to the Extra Magic Hours then you should definitely take advantage of them. The crowds are extremely limited and you can literally walk onto the different attractions with little to no wait. If you're not staying at one of the Resorts on property then it doesn't matter because you don't have access to the Parks during those times anyway.

Now, I think this may be what you're looking for...

During regular attendance periods the Theme Parks tend to be the busiest on the following days:
Magic Kingdom Park: Monday, Thursday, and Saturday
Epcot: Tuesday and Friday
Disney-MGM Studios: Sunday and Wednesday
Disney's Animal Kingdom Theme Park: Monday, Tuesday and Wednesday

Hope I could help!

One place you can look to find out about peak seasons and which days are busiest at which parks is the Birnbaum's Official Walt Disney World Guide. Here are some tips from a seasoned WDW traveler: (1) The absolute worst times to be at WDW are during summer vacation, any 3-day weekend, Thanksgiving weekend, and the Christmas/New Year's holiday. (2) The BEST times to go to WDW are October, January, and the time in between Thanksgiving and Christmas starting the Monday after Thanksgiving and the Friday before all the schools start letting out for vacation. (3) You're right -- any day that a park has extended hours is a day where it tends to be much more crowded, so avoid those days. (4) The park-hopper passes work very well because you can always go to another park if you start off at one and find it's too crowded for your liking. (5) Don't let rain dissuade you -- most of the rides are indoors, with the exception of Test Track at EPCOT, so you can still get on just about everything if it's pouring outside. Just take some rain ponchos and have fun! (6) Remember that EPCOT opens in two stages -- Future World opens first, then World Showcase opens around 11:00, so it's best to avoid EPCOT in the mornings to avoid long lines at the Future World attractions. (7) Take advantage of the FAST Passes. Here's how they work: Say you want to go on a popular ride like Splash Mountain but the wait is over an hour. Find the FAST Pass station and put your park ticket in one of the machines. The machine will spit your ticket back out with a FAST Pass for Splash Mountain that gives you a one-hour window where you can come back and virtually go to the front of the line (you may have to wait 5-10 minutes on heavy traffic days). You can usually only get one FAST Pass at a time, but check your FAST Pass once you get it -- the pass will specify the time when you can get another FAST Pass for another ride -- sometimes you can have two FAST Passes at once if you play your cards right.

Honestly - we've tried it all. Supposedly the slowest month (October) and middle of the week. Bottom line is, the only slower days are rainy days. I was amazed how many people take their kids out of school to go to DW.
I know my wife bought a book on "How to do Disney World" (not the exact name). But it had a ton of information.

Good Luck

my brother is a Disney Nut. He has been in Disneyland every day of the year and has proven beyond any statistics that the best day at either park is SUPER BOWL SUNDAY.

Just get there early, to try and beat the lines.
