I have done some research on the web and found a few articles but overall very little information exists on this subject. I know Nietzsche didn't have an Environmental Philosophy specifically, but did mention such things as right diet and balance with nature etc.If you know of any good books, articles or commentary on the subject please pass it my way. Thanks.

Your best starting point would be the very recent article by M. Drenthen. Its bibliography should help you branch out from there.

The Center for Environmental Philosophy has published several articles on this subject; citations are below.

Note: be careful in your analysis that you do not confuse his use of the word 'nature' to mean 'reality' rather than 'the environment', as when he says such things as "Art is not merely an imitation of the reality of nature, but in truth a metaphysical supplement to the reality of nature, placed alongside thereof for its conquest." His usage is metaphysical, not about environmental ethics.
