I'm possibly planning a visit to Quebec City this weekend, specifically on Christmas Eve. Will things in general be open, and will there be stuff to do? How late will stores in general stay open until then?

Stores close at 5 on Christmas Eve. (Actually they always do on Sundays anyway.)
Attractions probably have the standard Sunday schedule.

I am going to Quebec City on Saturday for 5 days. Here are some things I have found out.'

First, make a reservation for dinner on Christmas Eve. If you want something different try Aux Anciens Canadiens

The oldest grocery store in North America will be open it is call Maison Jean-Alfred Maison

I don't know if your into booze, but if the hotel - Le Chateau Frontenac there is a SAQ (liqour store) that is touted as the worlds most beutiful with over 700 rare wines.

You must go to Quartier Petit Champlain. Check this out !

You can take a carraige ride through old Quebec, but I can't seem to find the site.

Christmas Eve they should be open, but probably on holiday hours, you'd have to check what the hours would be though, usually either 12-5 or 9-6 something like that, Christmas Day nothing will be open then.

Has anybody told you NOT to do your Christmas shopping the day before?

I'm sure that this special holiday is an event celebrated all around the world.
I would contact Travel Agents with travel experience at this location. They might also be able to provide you with information regards to any special events for the Christmas Traditions happening for Quebec City.
Another option to consider is to go on-line and access the site of the city or contact their local 'chamber of commerce' or mayor's office to find out of special events!!!
