What universities in Japan offer degree programs that I can return to the US with after I've had my fill of Japan?

Assuming that you will be working/living in Japan in the future... It depends what you want to study, how much money you have, etc. You have to have close to fluent Japanese skills if you plan on going to university in Japan. There are many Westerners who have lived in Japan a decade and wouldn't be able to understand a lecture. You could get in to some Japanese universities without knowing much Japanese, but you just would end up doing nothing but paying tuition. If you want to come out having learnt something, then I'd stay at home and go to university wherever that is. If you go over to Japan university-educated with a strong interest in Japan, you should be able to find some sort of work there. If you go over thinking you can do a degree at a Japanese university, you may be surprised as to what exactly that will demand of you - think tons of money, several years of Japanese language study beforehand, discrimination, and unless you're doing something like becoming a doctor, probably not actually learning too much about the field you want to get in to.
