Really, you don't need to prepare foods for your mbunas. Algae pellets and flakes are sufficient (avoid spirulina-only products, or mix them with other types). You can also make your own flakes by blending the veggies I will mention below, bread crumbs, and powdered egg, and baking it, spread thin on a cookie pan, until crispy.
However, variety and fresh woods are great, also, peas, zucchini, carrots, spinach, and romaine lettuce are terrific choices.
Before feeding any foods, freeze them first. When they thaw, they will be more easy to eat. You can boil them, too - this has the added benefit of causing them veggies to sink to the bottom of the tank - however, boiling causes a loss of nutritional value.

You can buy vegetable clips that suction-cup to the side of the tank and hold pieces of food in places for the fish to eat. OR you can find stainless-steel springs on e-bay (like a corkscrew shape) that you screw into the vegetable to make it sink. Don't use anything that isn't stainless-steel, or it'll rust.

I take everything she said plus green beans, 1 slice of bread and one egg and blend it all together in a blinder and spread it on a cookie sheet (I squeeze all extra water from the vegetables) and let it bake. When its soft but firm enough to stay on a vegi clip in water its done. They love it!
