I think it varies according to the manufacturer. Did your ring come with a colour guide?
I found this on a website (although if you got a colour guide with your ring it may be slightly different):
Black - tense, nervous, harassed or over worked
Grey - anxious, nervous or strained
Amber - emotional, unsettled or cool
Green - average and not under great stress
Blue-green - inner emotions charged, somewhat relaxed
Blue - relaxed, at ease, calm and lovable
Dark blue - very happy, love, passion and romance
It just goes off temperature.

most mood rings are different. The colors mean different things.
Sometimes they give you a paper with the purchase of your mood ring that tells you what the colors mean, though.

whoever invented mood rings are stupid. the colour changes because of your body temporature, not that your happy when it goes red and your sick when it goes purple and you want to murder it when it's any colour(that one might be right actually...). i wouldnt bother with them if i were you. they're a waste of money and space on your finger and in my case, space somewhere in the u-bend.

It changes with heat so black means you are cold and whatever colour it goes up to means you are warm
