Write a poem for her and have it framed; create nice framed artwork with a famous/inspirational quote she'd like, really appreciates; English teachers always appreciate books; tickets to a poetry reading or something like that, if she enjoys poetry; or tickets to theater - community theater can be good sometimes and tix aren't necessarily expensive; movie tickets; a cool gift basket for a night in at the movies - a good DVD, some popcorn/treats, etc.

A book is always a good idea. Talk to her casually about books and ask what she is looking forward to reading.
