They fall over because their root system isn't stable enough to keep them upright in wind or heavy snow, or whatever took them down in the first place.

If righted, they would still have the unstable root system and would just fall over again eventually.

Once they go down they're kinda done. To keep them up would require extensive bracing, and at that point the natural, beautiful tree effect is kind of lost.
