While they are on the island, they are on a diet of minimal nutrition and they lose a lot of weight. Then the show finishes taping, they go home for a few months & resume eating normally while the episodes are airing on tv. Then, by the time the final episode/reunion show rolls around, it's been 3-4 months since they were on the island & they've began to put their original weight back on. There's a 3-4 month gap between the time the are on the island and the time they attend the Reunion show.

Between the final vote and the finale show, the contestants have been off the island for a while and have returned to their normal eating habits.

because they probably have resumed eating normally.. they aren't on a small diet of fish, coconut and water.
