I have to pick a test to test for differences among means. I have to use gender (2 level) and 3 test scores that each subject took. Is this a 2 x 3 ANOVA? If not, what is it? How do I put it into SPSS and interpret the data?

I hope I understand you correctly: You want to see whether there is a different based on gender on these 3 test scores, is that correct? If this is the case, the appropriate test to run is a t-test for each of these test scores based on gender.
You would run a two-way ANOVA if you wanted to figure out whether there is an interaction between test type and gender on the final scores. I hope that helps you out a bit.
