You should definitely start with Timothy Zahn's trilogy! Some of the later Yuuzhan Vong ones are good, but I think Zahn does the best job of continuing the original movies...

Star Wars-based fiction predates the release of the first movie, with the 1976 novelization of "A New Hope" (ghost-written by Alan Dean Foster and credited to George Lucas). However, Foster's 1978 novel, Splinter of the Mind's Eye, was the first Expanded Universe work to be released. In addition to filling in the time between the movies, this additional content greatly expanded the Star Wars timeline before and after the film series.
Star Wars fiction flourished during the time of the original series (1977-1983), but slowed to a trickle afterwards. In 1991, however, Timothy Zahn's celebrated Thrawn Trilogy debuted, sparking a new interest in the Star Wars universe. Since then, several hundred tie-in novels have been published by Bantam and Del Rey.
Notable books in the series include The X-Wing Series by Michael A. Stackpole and Aaron Allston, The Jedi Academy trilogy and Tales From... series by Kevin J Anderson, and the New Jedi Order series, by various authors. Another notable series of books is the Young Jedi Knights, also by Kevin J Anderson, which follow the adventures of Jacen and Jaina Solo and their friends.

There are a multitude of novels that cover the different "eras" of Star Wars. I stumbled across this link a few days ago and it list just about all of the novels within the 7 general eras (Old Republic through Legacy) under the "Book Guide" panel along the left side of the screen.

They are listed in chronological order (it looks accurate) and you can see summaries for nearly all of the books to see which ones you might be interested in reading... there are a LOT of books. I gotta lot of catching up to do myself =P Most books can be read "out of order", but it's best to read certain trilogies/series of books in succession (so you get the whole story) before moving on to another book/series.

Hope this helps. Out of the novels I've read most were pretty good, the rest were okay.

I would recommend "Heir to the Empire" by Timothy Zahn. It was one of the first EU novels to come out (in 1991) and you really only need to have seen the original trilogy to know who is who. It introduces some good characters and a good storyline, which is continued in "Dark Force Rising" and "The Last Command"

If X-wing pilots and dogfights are interesting to you, perhaps also check out the X-Wing series of books, starting with "X-Wing - Rogue Squadron" by Michael Stackpole.

if you want to read about Han Solo in his smuggler days, check out the Han Solo Adventures by Brian Daley - Han Solo at Stars' End, Han Solo and the Lost Legacy, Han Solo's Revenge. I think they can be found all in one paperback now.

and if you prefer the characters and events of the prequel movies, perhaps check out some of the Clone Wars novels, although typically they tend to deal with individual characters and not the whole cast of main movie characters. Mace Windu is the main hero in "Shatterpoint" while Obi-wan is the hero in "The Cestus Deception" and Anakin is the hero of "Jedi Trial" and Yoda stars in "Yoda - Dark Rendezvous"

Start with the Han Solo Trilogy, it gives his story before episode 4, then read shadows of the empire (it takes place between episode 5 and 6, then just go in cronological order.

U should start with The Truce at Bakura. I think it's the closest to the movie. it starts the day after Return of the Jedi.
