Niece is appropriate but you usually follow up by explaining she's is your cousin's daughter so they'd understand the affinity more.

First cousin, once removed. A second cousin is your parent's cousin's kid. Niece is your sibling's daughter. OR, just say 'cousin'.

Cousin. If the cousin is your first cousin then the daughter would be your second cousin.

She would be your second cousin. If you are older than her, it would be acceptable to call her by her first name. However, she may need to address you with a title to show respect, something like "Cousin (insert your name)".
