This year, FINALLY -- I will only be preparing meals for ME (Because after being a Long-Term single parent of two disabled children I am FINALLY an Empty-Nesting Single Retiree) ... which means ...

Boneless Turkey Breast with Veggies in the Oven .. my homemade stuffing, and a pumpkin pie.

We have Christmas dinner at my house around 6:00 pm. I'm planning on two casseroles (since we will be out of town on Christmas morning). I can have them made & frozen way ahead of time. One is chicken & rice; the other is ham, potatoes, & green beans. Both are 9 x 13 so everyone can choose the one they like or try a little of both. Hot dinner rolls & relish tray will also be served. Appetizers include cheese ball and chips/dips. For dessert--sugar cookies & ice cream. The children love that kind of dessert. It's an easy meal that can be prepared ahead of time--so.........I can enjoy the company of family and opening of presents.

Too Many. There's the Christmas Eve Meal and desserts and drinks and appetizers . Then there is Christmas Brunch, Coffeklatch, Christmas Day Dinner. Also, all of the baking and making of candy and decorating the gingerbread houses. WHEW!
I can hardly wait!

Oh my gosh..........ham, mashed potatoes, gravy, green bean bundles, candied sweet potatoes, dressing, pistachio pudding, cranberries, pickles, olives, pickled beets, apple pie, chocolate cake, pecan pie, mixed nuts, sausage balls, almond bark, white chocolate covered pretzels, divinity, coconut candy, fudge, peanut brittle, caramel popcorn, popcorn balls, molasses sugar cookies, chocolate chip cookies, double yummy cookies, chocolate cookies, and I'm sure more things that I don't think of right now, and ones that will get added by Christmas Day! .......All homemade! Mmmmm!!! Can't wait!! =)
