The pH of the mouth must be greater than 7 to protect your teeth from acid attack. The pH of your stomach should be about 2 so the acid can hydrolyse food protein as part of the digestive process. Large protein molecules are broken down into amino acids which are small enough to be absorbed and then rebuilt into the proteins of your body tissues. The pH of your small intestines should be a bit less than 7 to provide a hospitable environment for your intestinal flora; the bacteria that help break down your food.

Different things must be done in each part of your body. The enzymes to do those things only operate at specific pH's, and thus, the pH suits the needs of the organ's enzymes.
