Science will help you have a greater understanding of the world. When you find out your child is born with a damaged chromosome #23, you will have an idea of what the doctor is talking about. (I hope you and everyone else reading this never ever has to deal with something like that.) History helps you to understand our past so that mistakes in the past are hopefully never repeated. A language will help you with your SAT scores and give you a skill that will be invaluable. The school's job is to educate the whole person and give you a well-rounded education. They also hopefully teach you how to think instead of constantly regurgitating the same information back.

You go to high school to learn subjects that you'll use all through life, not just to take SAT tests. While math and English are very essential, so are history, science and foreign languages. All subjects are lifetime skills that will be crucial to you in your career and in raising a family, your social and professional contacts, or in everyday situations.

You can check just about any college you want, they all say that the main thing for college admissions is your high school GPA, not your SAT or ACT score.
They're the experts on what's important for success in college and life, so I think you have to go with their opinion. All your school subjects are important, not just Math and English.

There is much more to living, society, and life than the SAT, and believe it or not, the SAT is not the only thing that matters. In the overall scheme of things, the SAT is just one small stepping stone on the path of life.

Your entire education is not intended as a ramp up to your SATs. It's supposed to be an education in and of itself...to teach you things, so that you know something about the world, how things work, how to problem solve, how to read and write, how to think independently, etc.
