Nothing. Surprisingly enough, absolutely nothing. What you would see would be club teams spring up all over the place.

I used to live in Spain awhile back as a FES and the high schools around the area didn't have school sponsored sports. However, after school, kids simply went to their local club practice for soccer, swimming, biking, or baseball.

We have club teams here in the US as well, but predominately they are only for summer sports, off-season sports (i.e. basketball in the spring, softball in the fall, etc) or for children (biddy ball, Pop Warner, etc).

Kids wouldn't get fatter. They'd simply play their respective sports against each other instead of together. Of course, that camaraderie that comes from being on a school team would be gone, and that's a big part of a HS students life. I remember well. However, I imagine schools would spend a lot more of that newfound money on teachers' salaries, technology, and educational materials.

It has both its plus and minuses.

P.S. I'm a teacher....and a 3 sport coach.

If school sports were dropped it would hurt the children that really excel only when they are playing sports.

All Hell would break loose and the world would stop spinning. But, if something like the Academic Decathalon was cancelled, no one would care and everyone would ignore the "geeks".
