minus/subtraction symbol, dash

it has different names depending on the context.

You can use it in math to denote subtraction - e.g. 3-1=2 - then it's called a 'minus sign'

It's also used to join two words together in a phrase - e.g. half-hearted - then it's called a 'hyphen'

I've also used it several times in this answer as a punctuation mark e.g. like this - see! Then it's called a 'dash' - specifically an 'en dash' because it's the same length as the letter n. There's also an 'em dash' which is twice as long.

Wow I really didn't mean to give such a long answer! But for a little symbol it really is very prolific.
