I knitted a "cloth" for my mother and after I binded it off it won't lay flat. I think I made the stitches too tight. Is there a way I can fix it without having to take the entire thing apart such as running it under water and stretching it, or pressing it in a book? Thanks for the help!

You can try blocking it by wetting it and then pinning it flat and letting it air dry.

But if you made the cloth using stockinette stitch, it will probably curl again. Stockinette curls. You could crochet a border around the edge and it might keep the cloth from curling.

Next time, you might want to knit the cloth using a stitch pattern that doesn't curl, like seed stitch or moss stitch.

If you mean a dishcloth, those are small and fairly simple. If you have time, do another one. If your cloth is made with natural yarn (wool, cotton, etc) you can block it.

To block a knitted piece, pin the item securely to an ironing board or similar surface. Make sure it's straight. Take a steam iron or garment steamer and steam the cloth well. Don't touch the iron or steamer to the knit piece, but hover over it so it gets well and truly steamed. When it's dry, remove the pins carefully.

Of course, if it's a dishcloth, this is a moot point because once it's wet, all the blocking goes out the window. Oh, well. Do you crochet, too, or can someone show you how? If so, run a lightly-ruffled border all the way around your cloth. Then no one will be able to see that it's not quite flat. This really works to disguise things.
