I've heard it before but i cant remember,but anyways if something does happen how longs it take?

They just become more sensitive to light...just like we do after being locked in a dark room for a few days.

For them to evolve into white eyeless cave creatures it would take generations and generations for those mutations to happen.

Not likely that you could keep it perfectly dark and let it reproduce. Gold fish rarely reproduce in a home tank.

leave them in a dark room for about a week and the they turn white

I don't think anything would happen. Maybe they might have trouble finding food, but goldfish are such pigs that even that probably is not true.

They squint when you turn the lights on and bump into things. Just like when you leave the theater.
