but Final Fantasy VII is definetly the most memorable, resulting in many spin-offs

Some of the best Final Fantasy games in the series include:

Final Fantasy IV (formerly Final Fantasy II in the US)
Final Fantasy VI (formerly Final Fantasy III in the US)

Both of those are available through "Final Fantasy Anthology" for Playstation. They were originally SNES games and are the ones that I played the most as a kid. They have GREAT replay value. Of course the graphics have come a long way since then.

On Playstation 1 & 2:

Final Fantasy VII is excellent, but I feel that the game was unfinished and left a few plot holes. This is well documented among die-hard fans. It doesn't distract from the excellence of the game however as that particular game spun-off some others.

Final Fantasy VIII is also excellent. Personally I feel that it had the best soundtrack of the entire series. Graphics are also excellent and the magic system wasn't too complicated. Storyline is also good but for me the replay value was low other than to see the beautiful cut-scenes and the soundtrack.

Final Fantasy X/X2 is a great series. The first to offer voice acting.

Outside of the traditional Final Fantasy genre is:

Final Fantasy Tactics and Final Fantasy Tactics Advanced (for Gameboy Advanced). I personally have an affinity for these games, but I can see some others not liking them. Its more strategy based.

Right now it will prove to be rather easy finding a copy of FFXII which for the 6th generation systems has proved to be the best.

FFX, I believe it to have been a breakthrough in the series with voice acting, and facial expressions. BUT, comparing it to most of the other series games, it was a disappointment, mainly due to undeveloped characters. (that goes for X-2 as well)

FFIX I don't believe had oh too much of a well developed plot, it wasn't all too bad though.

FFVIII was indeed a great game (too many side-quests though).

FFVII has indeed proved itself in bring one of the greatest ones, being the first to use 3-D Polygons, although I am pretty sure they have stopped all productivity of it.

FFVI or FF:Anthology, not AS good as VII, and XII, but it was indeed one of the best ones, well developed characters, plot.

The main issue here, is due to the release of FFVII all the older FF's were overlooked and abandoned. They might be hard to get, but I'm pretty sure you can get them online.

For a fact I know you can still find copies of FFVIII, FFIX, FF:Anthology, FFX, FFX-2, FF:Crystal Chronicles FFXI, Dirge of Cerberus :FFVII, FFIII, and FFXII in most stores, if not, on Amazon.com.

Unless you want to go and hunt ebaY for FFVII I would suggest FFXII for the time being.

Here are the ones I would recommend:
FFVII, simply the best RPG ever created for the PS1
FF Tactics if you like a bit of a strategy element with your RPGs
FFX because it did a decent job with the Conditional Turn-based Battle system (a change from Active Time Battle)
FFXII because it doesn't use the typical 'guy likes girl' love story and...it kicks ***.

Final Fantasy VII is really good, but good luck finding a copy...
I've never played VIII, but I heard that one was really good too.
X and XII are both good as well.

I mean XII as in "12" not as in "X-2"

FFVII. It's the one that started it all for Sony. Sony wouldn't be what it is today without stealing FFVII from Nintendo.

It's got one of the most heartbreaking scene in video game history.
