In a Corporate setting how is it possible for a 3rd party to edit my email text remotely before I sent it?

yes, one time I saw the cursor actually move and edit my text in the subject line.

No because that would be like a remote dcesktop.

They'd have to be using some sort of remote control program. It would be pretty obvious to you that this was happening.
