Depends on the size of the ball said piece was taken from.if for instance the ball was 10 meters long and you have 8 meters left on the ball, providing that no-one else has taken any string from the ball ,then You would have a piece of string approximately 2 meters in length .On the other hand if your ball of string is elasticated then that's a whole different ball game.please can you confirm whether elasticated or not, you have to be more specific you see?

Intrinsically a piece of string has length but that length is unknown hence the
the phrase 'how long is a piece of string' means that the quantitative answer is not known and there is an implicate understanding that the answer will be difficult to find given the information available.

Remember Murphy's Law ?
If you have cut the string to length, you will find that it's length is just short of what is required.

how ever long you want it to be.
im guessing you do not know the meaning of string
or working on an experiment that requires a piece of string
just get about 10cm long, that should be good enough.
