If you use quick setting jelly, the setting agent is carragheen which is made from seaweed. Apparently it may be carcinogenic so I try to avoid products which contain it. Ordinary jelly contains gelatine.

Gelatin. This is a naturally occurring protein that dissolves in boiling water but becomes a jelly when it cools. It's mostly derived from animals, but a vegan version comes from seaweed.
